New Fungal Strain Boosts Arabica Quality Score in Fermentation Study

A recent study has identified a specific fungal strain that can significantly enhance the sensory quality of Arabica coffee during fermentation. Research published in the journal Food Chemistry detailed how inoculating Yunnan Arabica coffee cherries with the endophytic fungus Talaromyces funiculosus KQ2 measurably improved the final cup profile.

In the study, scientists screened 655 fungal strains isolated from coffee plants. The KQ2 strain proved most effective, increasing the coffee's sensory score by a reported 1.5 points, enough to elevate it into the specialty-grade classification. The research attributed this improvement to a distinct vanilla-cinnamon aroma profile and a 17.11% increase in sucrose content compared to uninoculated control samples.

These findings suggest a potential shift towards more precise, controlled fermentation methods in coffee processing. By selecting and applying specific microbial strains like KQ2, producers could gain greater control over flavor outcomes, similar to the use of selected yeasts in winemaking and brewing.
