Culturing is a fermentation method used by fermenters where a base culture rich in microorganisms is used to transform another product, similar to the process of making yogurt. At Finca Milan, this technique was applied to coffee fermentation. For over 3 years, work has been underway to implement mixed fermentation of coffee and tropical fruits such as: pineapple, passion fruit, orange, mango, banana, coconut, and other fruits and aromatic plants. In this technique, the coffee undergoes various aerobic and anaerobic fermentation processes and is slowly sun-dried. This fermentation technique has allowed us to develop very intense and unique sensory profiles that stand out for their brightness, clarity, and clean acidity.

Process details

After harvesting, the cherries undergo floating, selection, and depulping, then ferment for 18 hours in an open tank. After this, crushed pineapple is added to the tank, which is then hermetically sealed and fermented for another 120 hours, followed by washing with clean water and drying in a parabolic greenhouse.
