Culturing is one of the fermentation methods used by coffee processors. It consists of using a base culture rich in microorganisms to transform another product, as occurs in yogurt production.
At Finca Milan, this technique was applied to coffee fermentation. For more than three years, work was done to develop a mixed fermentation process that combines coffee with tropical fruits, red fruits, and various aromatic plants.
Through this technique, the coffee goes through different stages of aerobic and anaerobic fermentation before undergoing a slow sun-drying process. The result is sensory profiles of great intensity and character, recognized for their brightness, clarity, as well as a clean and defined acidity.
