The El Paraiso farm is located in the municipality of Buesaco at altitudes from 1,900 to 2,000 m and covers an area of 9 ha. The farm has around 40,000 trees planted of the Caturra, Castillo, Pink Bourbon and Geisha varieties. The processing station is divided into two zones: a classic-process zone (where coffee is produced using standard processing profiles — washed, honey, natural and anaerobic) and a second, experimental zone, which consists of three sealed stainless-steel bioreactors equipped with pH, pressure and temperature sensors. In these tanks, anaerobic fermentation profiles are created and tested, mosto is produced, and experiments with pressurized fermentation are carried out.

For drying, the farm has a parabolic dryer (greenhouse) with opening side flaps, a mechanical drying cabinet, and a greenhouse with multi-tiered African beds. During the harvest season, coffee is dried using a combined method (mechanical drying + greenhouse); between harvests, coffee is dried in the parabolic dryer.

The farm's owner, Jose Gomez, was born and raised in Buesaco into a farming family and, after finishing university, devoted himself to developing the farm and producing specialty coffee. More recently, Jose acquired another farm — Alto del Paraiso — and is planting it with Pink Bourbon, SL28 and Geisha.
